Today I was looking through my pantry, and found some coconut! I love coconut so much! My special friend The baking Angel Was visiting with me today, and we love to bake together , so we decided to bake these new and exciting cookies! Something that I like to do when I am stressed or tired, I like to have a bath.  The heat is relaxing and you can add things that are good for your muscles and for helping to strengthen your immune system, which we all need in times like these. Around the holidays, there is nothing better than apple pie! But who says you have to have it only around the holidays? it is the middle of summer right now, and I really wanted apple pie, so I decided that I would make one. I love it when my apple pie has many different spices and flavors, such as vanilla, lemon, and of course cinnamon! I hope you enjoy my AMAZING Apple Pie Filling! RECIPE Amazing Apple Pie filling! Ready in 45 minutes Fills 1 pie Ingredients 4 apples 1 teaspoon of vanilla extract 1 tablespoon of cinnamon 4 tablespoons freshly squeezed lemon juice ½ tablespoon of water 2 tablespoons of butter Optional: maple syrup or honey, if apples are tart Preparation Peel and dice all of the apples, and place in a bowl Put the water, lemon juice, and butter into a sauce pan Add in the rest of the ingredients once the butter is melted Stir occasionally Once boiling, let simmer for 20 minutes with the stove on lo
