Do you ever just need that yummy, cold treat for a summers day?
Well I certainly do! Most Popsicle's nowadays that you can buy at a grocery store contain a ton of refined sugars, and so I decided that I should come up with a sweet cold treat that is sugar free!

RECIPE
My Coconut Fruit popsicle
My Coconut Fruit popsicle
Prep time 10 minutes
Freezing time 3 hours
Yields 20 small popsicles
Ingredients
- 5 large strawberries
- 2 peaches
- 2 cup coconut milk*
- 1 cup SCD legal yogurt
- 1 teaspoon vanilla extract
Preparation
- In a small bowl, mix together yogurt and vanilla until well combined, put into fridge
- In a blender (I use a Vitamix) place strawberries, peaches, coconut milk, and yogurt mixture, and blend on low-medium for 30 seconds or until well combined
- Pour the mixture into your Popsicle molds and place in freezer
- Let freeze for 3 hours at least (but overnight is better)
- Enjoy
Tips
You can exchange the Coconut milk for either Cow milk, or almond milk (results may vary)
