Amazing SCD Apple pie filling

Around the holidays, there is nothing better than apple pie! But who says you have to have it only around the holidays? it is the middle of summer right now, and I really wanted apple pie, so I decided that I would make one. I love it when my apple pie has many different spices and flavors, such as vanilla, lemon, and of course cinnamon! I hope you enjoy my AMAZING Apple Pie Filling! RECIPE Amazing Apple Pie filling! Ready in 45 minutes Fills 1 pie Ingredients 4 apples 1 teaspoon of vanilla extract 1 tablespoon of cinnamon 4 tablespoons freshly squeezed lemon juice ½ tablespoon of water 2 tablespoons of butter Optional: maple syrup or honey, if apples are tart Preparation Peel and dice all of the apples, and place in a bowl Put the water, lemon juice, and butter into a sauce pan Add in the rest of the ingredients once the butter is melted Stir occasionally Once boiling, let simmer for 20 minutes with the stove on lo

I love strawberries, and I love banana, so what is better than those two things by themselves?? A Strawberry Banana Smoothie! This recipe contains the three greatest flavors, coconut, banana, and strawberries! And on a day like today, when it is almost 30 degrees outside, you need something like a smoothie, for protein, and to keep you hydrated and cool! Enjoy RECIPE The best Strawberry  Banana smoothie Ready in 10 minutes Yields 2 cups of smoothie Ingredients ½ cup strawberries 1 banana 1 cup canned coconut milk 1 cup SCD legal yogurt ½ cup ice optional: 1 teaspoon of vanilla extract Preparation Put strawberries, banana, and coconut milk in the blender and blend on medium for 10 seconds Add yogurt and blend until combined, add vanilla Add the ice little by little, blending in between. My sweet but salty SCD Shortbread

I have a sweet tooth, and ever since I was little, I have always loved short bread. Since being on the SCD diet, I haven't been eating sugar, and so my taste buds are adapting, and therefor, I now have a love for salty things. When a couple weeks ago I had one of my cravings for shortbread, I decided to try making my own recipe, and add a salty and sweet flavor! Enjoy! RECIPE Salty but sweet gut healthy Shortbread Ready in 25 minutes Yields 10 cookies Ingredients 1 cup unblanched almond flour 2 tablespoons of melted butter 2 tablespoons maple syrup (Or honey if on the SCD diet) 1 teaspoon of salt (plus extra for on top) ¾ teaspoon vanilla Preparation Preheat oven to 325 degrees Cover cookie tray  with parchment paper With an electric mixer, mix all of the ingredients together until well combined Scoop into 1 inch balls, and place on tray Flatten the balls with a fork Cook for 20 minutes Take out and let cool

Hi all, and welcome to my Blog! I am the kind of person who loves to bake, and experiment, ever since I was really little, I have loved baking. Something about it is very calming to me. In December 2018, I got diagnosed with Ulcerative Colitis which, I soon after found out, has many dietary restrictions. SCD Banana Bread Since I was young, I not only had a love for baking, I also have had an undeniable sweet tooth. If you know about the SCD diet, than you know, that you are not allowed to eat ANY refined sugars.  When I started out I thought "But how can I live without sugar? Sugar is in everything!"  As it turns out, there are actually a lot of amazing, delicious, SCD friendly, sugar free foods! This is my blog, where I will take you along on my IBD (inflammatory bowel disease) journey! We will make all sorts of delicious snacks, meals, desserts, and my favorite, Cakes!
