SCD Lemon Coconut Cookies

Welcome back to my blog, I have not posted a new recipe if a little while, but I am back, and I am prepared to blow of the roof with my new amazing SCD Lemon Coconut Cookies!!!! This recipe is full of that awesome lemon flavor, and is a great snack for school, which is starting up soon! Speaking of which, I will soon be coming out with a new post talking about school for children with IBD, and of course, lunches!! Enjoy RECIPE SCD Lemon coconut cookies Ready in 20 minutes Yields 13 cookies Ingredients ½ cup unsweetened shredded coconut 1 and a half cup of almond flour 3 teaspoons lemon juice 1 teaspoon fresh lemon zest 3 tablespoons honey Half a teaspoon of baking powder 10 teaspoons of almond milk Preparation In a large bowl combine almond flour,and baking powder, and mix until well combined In a separate smaller bowl mix together lemon zest, and lemon juice, and honey In the small bowl with your lemon, once combined

Easy SCD Maple Candies

Do you ever feel like you just want a hard candy to suck on ? If you do, but are on the SCD diet, options can be limiting, so here is a delicious candy, that I hope you enjoy! RECIPE SCD Maple Candies Ready in 2 hours Yields 18 hard candies Ingredients 2 cups pure Maple syrup Preparation In a large pot, put maple syrup on high to boil until it is bubbling, and stir continuously Put in your candy thermometer, and cook until it reaches 275 degrees Fahrenheit, and then remove from stove, all the while mixing. Pour the syrup into a glass bowl, with a spout, and continue to mix Pour the syrup (which is hot so be careful) into your molds Let it sit at room temperature for 15 minutes Put into fridge for 5 minutes Pop out of the molds and enjoy!
