My sweet but salty SCD Shortbread

I have a sweet tooth, and ever since I was little, I have always loved short bread.


Since being on the SCD diet, I haven't been eating sugar, and so my taste buds are adapting, and therefor, I now have a love for salty things.


When a couple weeks ago I had one of my cravings for shortbread, I decided to try making my own recipe, and add a salty and sweet flavor!

RECIPE
Salty but sweet gut healthy Shortbread


Ready in 25 minutes
Yields 10 cookies

Ingredients

  • 1 cup unblanched almond flour
  • 2 tablespoons of melted butter
  • 2 tablespoons maple syrup (Or honey if on the SCD diet)
  • 1 teaspoon of salt (plus extra for on top)
  • ¾ teaspoon vanilla




Preparation

  1. Preheat oven to 325 degrees
  2. Cover cookie tray  with parchment paper
  3. With an electric mixer, mix all of the ingredients together until well combined
  4. Scoop into 1 inch balls, and place on tray
  5. Flatten the balls with a fork
  6. Cook for 20 minutes
  7. Take out and let cool
  8. Sprinkle the tops of cookies with a little bit of salt
  9. serve


Tips


While cookies are still hot, sprinkle a bit of salt on top of them to add a nice salty and sweet flavor.
