My sweet but salty SCD Shortbread
I have a sweet tooth, and ever since I was little, I have always loved short bread.
Since being on the SCD diet, I haven't been eating sugar, and so my taste buds are adapting, and therefor, I now have a love for salty things.
When a couple weeks ago I had one of my cravings for shortbread, I decided to try making my own recipe, and add a salty and sweet flavor!

RECIPE
Salty but sweet gut healthy Shortbread
Salty but sweet gut healthy Shortbread
Ready in 25 minutes
Yields 10 cookies
Ingredients
- 1 cup unblanched almond flour
- 2 tablespoons of melted butter
- 2 tablespoons maple syrup (Or honey if on the SCD diet)
- 1 teaspoon of salt (plus extra for on top)
- ¾ teaspoon vanilla
Preparation
- Preheat oven to 325 degrees
- Cover cookie tray with parchment paper
- With an electric mixer, mix all of the ingredients together until well combined
- Scoop into 1 inch balls, and place on tray
- Flatten the balls with a fork
- Cook for 20 minutes
- Take out and let cool
- Sprinkle the tops of cookies with a little bit of salt
- serve
Tips
While cookies are still hot, sprinkle a bit of salt on top of them to add a nice salty and sweet flavor.
