Gut friendly Coconut, chocolate Cookie bar
Today I was looking through my pantry, and found some coconut!
I love coconut so much!
My special friend The baking Angel Was visiting with me today, and we love to bake together, so we decided to bake these new and exciting cookies!

Coconut, chocolate cookie bar
Coconut, chocolate cookie bar
Ready in 5 hours
Yields 42 bars
Ingredients
- 2 cups coconut flour
- 1 tsp baking soda
- 3 eggs
- ½ cup unsweetened shredded coconut
- ⅔ cup almond or coconut milk
- 1 cup water
- ¼ cup SCD friendly shortening Here
- 1 cup unsweetened melting chocolate
Preparation
- Preheat oven to 350 degrees
- In a large bowl, combine eggs, and flour
- Next add in almond or coconut milk
- Add in shortening and combine well
- Fold in shredded coconut
- Place parchment paper on baking sheet
- Place in 1 inch balls on baking sheet
- flatten balls
- Cook for 25 minuets
- Take out and let cool
- Meanwhile, in a double boiler, use the bottom pot to boil water
- In the top pot, add 1 cup unsweetened melted chocolate. Stir until melted
- crumble the cookies into a bowl
- firmly press crumbles into a lasagna Dish
- pour chocolate over top
- sprinkle with shredded coconut
- put in fridge overnight
- enjoy!
Tips
Use your hands to mold the cookie batter into balls
